Biography

Serena Fuller holds a Bachelor’s of Science in Animal Science and a Ph.D. in Nutritional Biology from the University of California, Davis. Her doctoral work explored the complex genetic architecture of obesity and cardiovascular disease using a variety of mouse models. Dr. Fuller is also a Registered Dietitian Nutritionist and completed her Dietetic Internship with a wellness focus at California State Polytechnic University, San Luis Obispo. Over the past several years, she has held adjunct faculty appointments at five different public institutions.  Her expertise is in the following areas: obesity and food insecurity, community nutrition education, and population nutrition action using the socioecological model. Her fieldwork focuses on implementation, evaluation, and research in obesity prevention for diverse populations with an emphasis on interdisciplinary team approaches to support healthy eating using the socioecological model’s framework to guide the intervention. Dr. Fuller also conducts research on dietary assessment tools using quantitative and qualitative methods. Outside of the classroom, Dr. Fuller loves running, cooking and spending time with her daughter and husband.
